Libby’s Limon’s blood sugar balance balls!

Snacking correctly can help with blood sugar balance and ridding yourself from the post lunch slump. Snacking badly does the opposite. These are my ‘blood sugar balance’ energy balls with Simplee Aloe’s aloe vera supplement which has been shown to help the body regulate blood sugar and therefore sustained energy levels. They also have healthy fat and protein levels to keep you fuller for longer, matcha to give you a sustained boost and cinnamon which helps to regulate insulin.

Recipe:

60ml Simplee Aloe’s aloe vera supplement
60g protein peanut flour
1 tbsp coconut oil
2 heaped tsp matcha
2 tsp cinnamon
4 medjool dates pitted
30g desiccated unsweetened coconut

Method:

Place all ingredients except coconut into a food processor – blend to bind ingredients into a crumb like texture. To create balls pick a bite size amount of mixture into your hand, roll into a ball and then cover in desiccated coconut – makes 8
