Gluten-free Coconut Quinoa Porridge

This creamy coconut porridge will be worth getting out of bed for and best of all, it’ll keep you full until lunch time! Quinoa is great as it’s gluten-free, a great source of protein (contains 9 essential amino acids) and it’s a complex carbohydrate, meaning it has a complex structure so it takes our body longer to break down…hence it keeps you fuller for longer! It’s also a great way of getting your daily aloe-fix by adding in 3-4 tbsp. of our health supplement.

Ingredients (Serves 1)

60g Quinoa
1/2 cup coconut milk
1/2 cup water
Couple of drops of vanilla extract
3 tbsp. Simplee Aloe health supplement (Original)
1 tbsp. raw honey
Pinch of cinnamon (optional)

Toppings
Coconut flakes
Blueberries
Chia seeds

Method
1. In a medium saucepan, combine the quinoa, coconut milk, water and vanilla extract over a medium-high heat and bring to the boil, then reduce heat and simmer for 15-20 minutes (or until the quinoa is tender). Add more milk or water for runnier consistency.
2. Add the cinnamon, honey & aloe vera supplement and cook for another 2 minutes.
3. Serve in a bowl and top with blueberries, coconut flakes and chia seeds
